Coco Pineapple and Fennel Smoothie Recipe
In this Vitamix smoothie recipe, coconut is mixed with pineapple and fennel to give you lots of nutrients such as healthy fats, carbs, vitamins, and minerals.
Ingredients
- 50g young coconut meat
- ½ cup pineapple, cubed
- ½ cup fennel, shredded
- 2 Tbsp. coconut milk
- 1 ½ cup coconut water
Directions
- Combine the coconut meat, pineapple, fennel, coconut milk, and coconut water into the Vitamix blender container and cover tightly with lid.
- Choose variable 1.
- Turn the machine on and gradually increase speed to variable 10, then increase to High.
- Blend for about 1 minute or until smooth and creamy.
- Pour in 2 chilled glasses.
- Serve and enjoy!
